personality,<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">and these inevitably change how each dish is perceived.<\/span><\/p><p><i><span style=\"font-weight: 400;\">Identit\u00e0 Golose<\/span><\/i><span style=\"font-weight: 400;\"> has yet to apply these reflections to the world of catering,<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">but we, small experimenters that we are,<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">can only be \/><\/span><span style=\"font-weight: 400;\">in the age of selfies and appearances,<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">where every dish is photographed before it\u2019s even tasted,<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">the rule remains the same \u2014<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">it\u2019s not photogenic beauty, but flavor and context that make the difference.<\/span><\/p><h3><b>The Table Is Not a Reality Show<\/b><\/h3><p><span style=\"font-weight: 400;\">A dish cannot live a life of its own<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">when dissected by a panel of reality-show judges,<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">detached from the social experience it\u2019s meant to inspire \u2014<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">deaf to the sounds, laughter, and aromas of the place it belongs to.<\/span><\/p><p><span style=\"font-weight: 400;\">The result is a flood of dishes that imitate foreign cultures<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">or mimic Michelin-starred menus without remembering <\/span><i><span style=\"font-weight: 400;\">why<\/span><\/i><span style=\"font-weight: 400;\"> they were born.<\/span><\/p><p><span style=\"font-weight: 400;\">It\u2019s like a piece of clothing that \u201cgoes with everything\u201d \u2014<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">in trying to fit all contexts, it loses its soul before it even leaves the kitchen.<\/span><\/p><p><span style=\"font-weight: 400;\">Creativity today is often paralyzed by the fear of judgment \u2014<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">by those who, online or \u201cin the right circles,\u201d<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">are ready to destroy anyone who dares to stand out.<\/span><\/p><h3><b>Every Dish Has a Story<\/b><\/h3><p><span style=\"font-weight: 400;\">One example from <\/span><i><span style=\"font-weight: 400;\">Identit\u00e0 Golose<\/span><\/i><span style=\"font-weight: 400;\"> struck us deeply:<\/span><\/p><p><span style=\"font-weight: 400;\">\u201cThink about 400;\">How many actually do that?\u201d<\/span><\/p><p><span style=\"font-weight: 400;\">Every dish has a story, a geography, a journey.<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">It only makes sense as part of the culture that created it.<\/span><\/p><p><span style=\"font-weight: 400;\">Taste cannot exist without knowledge of the ingredients,<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">respect for those who invented and preserved it,<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">and awareness of the context in which it was born.<\/span><\/p><p><span style=\"font-weight: 400;\">In two words: <\/span><b>the Human Factor.<\/b><\/p><p><span style=\"font-weight: 400;\">Serving ceviche to people who know nothing of its history may bring quick success \u2014<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">a trend, easy applause \u2014<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">but it\u2019s not for us.<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">We cook for those who want to <\/span><i><span style=\"font-weight: 400;\">close their eyes and discover entire worlds through taste.<\/span><\/i><\/p><h3><b>The Human Factor, Expanded<\/b><\/h3><p><span style=\"font-weight: 400;\">But that\u2019s not all.<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">The Human Factor is essential in countless ways.<\/span><\/p><p><span style=\"font-weight: 400;\">Far from glorifying the <\/span><i><span style=\"font-weight: 400;\">chef-as-deity<\/span><\/i><span style=\"font-weight: 400;\">,<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">true cuisine depends on a complex balance between creative genius and everything around it \u2014<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">the kitchen and floor staff, relationships with suppliers,<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">empathy with clients, and deep knowledge of ingredients and their 400;\">for all its wonders \u2014 can\u2019t offer:<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">direct, human connection.<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">Face-to-face encounters with the team, the client, the farmer, the fisherman, the grocer.<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">Touching, smelling, feeling the ingredients.<\/span><\/p><p><span style=\"font-weight: 400;\">At the end of the day, what we\u2019ve been saying for years is this:<\/span><span style=\"font-weight: 400;\"><br \/><\/span><b>the focus should never be just the dish \u2014 but the experience around it.<\/b><b><br \/><\/b><span style=\"font-weight: 400;\">The laughter, the conversations, the exchange between people who meet through food.<\/span><\/p><h3><b>No Chef Is an Island<\/b><\/h3><p><span style=\"font-weight: 400;\">Maybe someday we\u2019ll be able to do almost everything online.<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">But we\u2019re sure that <\/span><i><span style=\"font-weight: 400;\">sharing a meal among friends<\/span><\/i><span style=\"font-weight: 400;\"> will always remain part of that \u201calmost.\u201d<\/span><\/p><p><span style=\"font-weight: 400;\">Human connection will always pass through a table,<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">as it did two thousand years ago.<\/span><\/p><p><span style=\"font-weight: 400;\">Through the friendships between chefs and farmers, fishmongers, and artisans<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">who make each restaurant a living, unique experience \u2014<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">one that can perhaps be imitated, but never truly replicated.<\/span><\/p><p><span style=\"font-weight: 400;\">Through teams built on respect,<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">where every role matters and no one plays god.<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">No restaurant can exist without its chef\u2019s talent,<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">but no chef can thrive as an island \u2014<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">blind to the people who help turn each dinner, each evening,<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">into something worth living.<\/span><\/p><h3><b>The Flag of Empathy<\/b><\/h3><p><span style=\"font-weight: 400;\">Finally, we were struck by <\/span><i><span style=\"font-weight: 400;\">Identit\u00e0 Golose\u2019s<\/span><\/i><span style=\"font-weight: 400;\"> reflection on <\/span><b>multisensoriality<\/b><span style=\"font-weight: 400;\">:<\/span><\/p><p><span style=\"font-weight: only thing that makes sense in a world<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">where no one truly listens anymore,<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">where everyone shouts their own truth, desperate to be seen.<\/span><\/p><p><span style=\"font-weight: 400;\">Listening, in 2018, is revolutionary.<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">And we\u2019re proud to have raised that word as our banner for years
